Fermentation parameters: 7 days, 33°C

Yeast strain: DistilaMax RM (Lallemand)

Still: 2000L copper pot still (Specific Mechanical Systems, Victoria, BC)

Strip run time and yield: 9 hours, 33% ABV

Liquor run time and yield: 10 hours, 66-69% ABV

Heart range: from 77 to 47% ABV

Dilution: down to 40% ABV with demineralized local source water (St-Simon-de-Rimouski)

Filtration: 5-micron filters. Non chilled-filtered

THE DISTILLER’S TASTING NOTES

Nose: tarte tatin, sweet apple cider, brown sugar, toffee and oak

Mouth: ice cider, vanilla, ripe pear, maple butter, grape pit, sap/green notes and banana

Compared to batch 001: lighter on wood notes so give more room to the esters and oils in the distillate. Reminiscent of pit fruits and their spirits. Stronger toffee presence.
