Still: 2000L copper pot still (Specific Mechanical Systems, Victoria, BC)

Strip run time and yield: 9 hours, 33% ABV

Liquor run time and yield: 10 hours, 65,9 % and 71,1% ABV

Heart range: from 77,5% to 50,5% ABV

Dilution: down to 40% ABV with demineralized local source water (St-Simon-de-Rimouski)

Filtration: 5-micron filters. Non chilled-filtered

THE DISTILLER’S TASTING NOTES

Nose: apple, hazelnut, banana, vanilla, light maple syrup, wood and beeswax

Mouth: sap, wood, unroasted macadamia and roasted nuts, black pepper, nutmeg and beeswax

This third expression of our Acerum is made with a lighter-colored maple syrup, bringing delicate grassy and fruity undertones. We also added the content of two older barrels in blend to bolster the complexity and all-around balance of the spirit.
