MASHING

Raw ingredients: 75% corn (Montérégie, QC), 15% rye (Saint-Joseph-de-Kamouraska, QC), 10% malted barley (Témiscouata, QC)

Fermentation parameters: simultaneous saccharification and fermentation (SSF) on grain, 7 days, 30 °C

Yeast strain: Distilamax GW (Lallemand)

Yield: 10-12% ABV

 
 
 

DISTILLING

Still: 2000L copper pot still (Specific Mechanical Systems, Victoria, BC)

Strip run time and yield: mash distillation on grain, 9 hours, 32% ABV

Liquor run time and yield: 10 hours, 70% ABV

Heart Range: from 73.7% to 62,5%

BOTTLING

Dilution: down to 43% ABV with demineralized local source water (St-Simon-de-Rimouski)

Filtration: 5-micron filters. Non chilled-filtered

Production: 714 bottles

 
 
 

FINISH

Original product: Double Export Stout (limited edition Da Costa, from Dunham Microbrewery). This stout had aged many months in our own Acerum 1yo barrels beforehand.


Fishing time: 10 months

 

THE DISTILLER’S TASTING NOTES

Nose: Sweet corn, vanilla, oak, cacao

Plenty of woodspice colliding with corn’s sweetness : this tribute to our neighbor's Bourbon delivers even more flavor with this fourth expression. It has also been finished in full-bodied double stout, which adds silkiness and extra cocoa notes.
